At first appearance , untried sword leaf lettuce is a a reasonably ordinary fiddling liberal folio lettuce . But it is far from the ordinary salad green . It is a live cool conditions craw ; a plant of many names and many role .
With very little effort I have originate batch of delectable blade leaf salads over the last few seasons . The texture is similar to familiar green leaf moolah with a much stronger , and make bold I say adept flavor . I reap it young and utilize the small tender leave as the # 1 salad trough filler from our garden . In fall and other spring it outperforms all of the other lettuce miscellanea that I develop .
I do not use covers to protect my tender greens in tardy winter / former give , so I plant plenty of variety and hope for comely weather . Sometimes we are golden , but this year the weather has been extreme . In the last few hebdomad we have had some 80 degree days and some 30 degree night . If it were n’t for our faithful steel leaves , we would n’t have any salad to pick .

I planted a 4 ft x 6 ft division of a raised bed in late January with a commixture of gelt left over from my fall planting . The only green that have make it are a handful of spinach plant and seemingly all of the steel leaf lettuce . These putting surface are topnotch survivors that have tollerated both freezing and scorching temperatures .
I would give a blog post to these leaves just because of their unbelievable resilience and donation to the salad bowl , but they have much more to pop the question than just salad makeweight . These jet are also fabulous cooked ! If the thinking of cooked lettuce is off - putting to you , I completely realize . I ca n’t stand the cerebration of a char limp butter lettuce either , even though wilt and cooked boodle have been the trend recently . Sword leaf lettuce is quite unlike than other lettuce when fudge . It is very much like misrepresent Choy green and is known to many masses as AA Choy . I enjoyed it for lunch today in aQuick and Easy Vegetable Lo Mein . The greens were raw , delicious and a complete addition to my dish .
When I started research Sword leaf / AA Choy and all of it ’s uses , I discovered many name calling for this Lettuce : Yu Mai Tsai , AA Chop Xin , “ A ” Lettuce , Stem Lettuce , Celtuce , Wosun , Celery Lettuce , and just “ A ” .

When allowed to mature and bolt these goody salad greens turn into large plant with heavyset husk . The fledged industrial plant are trimmed and the lower leaf removed before being sell in Asian markets as AA Choy or Celtuce . The stalks of the mature plant life can be pealed and thinly sliced for use in salad . They have a crunchy grain and cultivated celery like flavor . The sliced stems can also be used to add a nutty spirit to soup and stews .
There seem to be endless theory for the habit of this works . It can bestow yummy flavour and majuscule texture to many bleak or cooked dishes . It is of far greater culinary value than typical wanton leaf kale .
The ease of growing steel leaf lettuce combined with it ’s culinary versatility should realize this plant of many names a place in every backyard garden .
